Recipes from the US use Fahrenheit, most other countries use Celsius, and older British recipes use gas marks. Fan (convection) ovens cook hotter, so lower the temperature by about 20 °C (25 °F).
Tips
- Celsius values are rounded the way recipes usually print them (350 °F is exactly 176.7 °C, written as 180 °C).
- Oven thermostats are often off by 10–20 degrees. An inexpensive oven thermometer tells you the real temperature.
- For convection baking, also check doneness a few minutes early.
